For more than 50 years, Al Pacino has been synonymous with intense, commanding acting. In films such as "The Godfather," "Scarface," and "Scent of a Woman," Pacino undeniably dominates the silver screen. However, one of his favorite meals is a pasta dish that doesn't read as intense at all. Italian food writer Daniel Bellino Zwicke shared in his book "Positano the Amalfi Coast Cookbook: Travel Guide," (via AllRecipes) that Pacino's Italian dish of choice is, in fact, the rather humble spaghetti aglio e olio.
Italian for "spaghetti with garlic and olive oil," this dish hails from Naples, where it was known as a sort of working man's dish. It comes together super quick, requires few ingredients, and even the most novice cook can nail it. What's more, it's basically a one-pan wonder. First, the garlic (fresh always beats jarred) is sauteed in olive oil with a bit of red pepper for heat. This is then combined with freshly cooked spaghetti and some of its pasta water, before being finished with parsley and grated Parmesan chees
Al Pacino is known to ask for his favorite pasta dish when dining out, even if it isn't on the menu. New York Italian restaurant mainstay Serafina even went so far as to create a menu item specifically to pay homage to Pacino and his affinity for the dish, Spaghetti Aglio & Olio "Al Pacino," which remains a staple on its menu. Its version is a classic rendition finished with Parmigiano Reggiano cheese.
The key to making pasta aglio e olio decadent, rather than just making spaghetti with some garlic, is the starchy pasta water that's added to the cooked pasta and sauteed garlic. Cooking the pasta in an adequate, but not abundant, amount of water ensures the pasta water becomes super starchy. This carb-forward liquid gold is what emulsifies the mixture, letting the garlic and olive oil transform into a creamy sauce. You could also upgrade the dish by using roasted garlic, or even adding pepperoncini peppers for an extra kick. It may just be enough to have you uttering (in an entirely more lighthearted way than originally delivered) "say hello to my little friend" as you tuck in.

"WHAT DOES AL LIKE to EAT" ?

Al Pacino is a big fan of a pasta dish called spaghetti aglio e olio. It’s a Neapolitan dish that features spaghetti noodles, good olive oil, lots of garlic and red pepper flakes for a spicy kick. It goes without saying the pasta dish and the Scarface star have been linked together a lot in recent history. 

Al Pacino’s love of Spaghetti Aglio e Olio (Garlic & Oil) also came up in Daniel Bellino Zwicke’s Positano the Amalfi Coast Cookbook: Travel Guide. “When I was the wine director at Barbetta Ristorante in New York City, whenever Al came into the restaurant, he would often ask if we could make him a plate as it wasn’t on the menu,” Zwicke wrote. “Al literally made us an offer we couldn’t refuse, naturally we didn’t, and we always gave Mr. Pacino a plate of his beloved spaghetti aglio olio, just the way he liked it. You’re welcome Al.”

T-Bone Steak ! Al says, "I love a nice T-Bone Steak." And Al likes his steak covered with sautéed onions. He also loves to eat Dover Sole. He likes his Dover Sole sautéed in butter, with a little squeeze of fresh lemon. "So good."

Al loves Italian-American classics, like Spaghetti & Meatballs, Spaghetti in Garlic & Oil, or a simple Spaghetti Marinara. If he has some Eggplant Parmigiana in the frig, he'll eat it straight out of the refrigerator cold. He loves it, and says, "It taste very good ! Cold Spaghetti & Meatballs too. Believe it or not. I love it."

Make the Following Recipe, but OMIT The ANCHOVIES

Note : Note, the recipe for Spaghetti Aglio Olio as Al Pacino likes it and as it’s written in Daniel Bellino’s Grandma Bellino’s Cookbook, encompasses Two-Recipes-In-One .. 

You have the Recipe for Spaghetti w/ Garlic Oil & Anchovies, and to make Spaghetti Aglio Olio the way AL Likes It, is by making this recipe, but omitting the Anchovies to end up with Spaghetti Aglio Olio, just the way the Great Al Pacino likes it.

INGREDIENTS :

¼ cup best quality
Italian Olive Oil
6 cloves of Garlic,
peeled and minced
½ teaspoon
Red Pepper Flakes
6 Anchovy
Filets minced fine
1 pound
imported Italian Spaghetti
¼ cup
Italian Parsley

Put a large pot with 4 quarts of water on the stove. Add 2 tablespoons salt and bring to the boil.

Place Olive Oil and Anchovies in a large frying pan and cook on medium heat for 2 minutes.

Add garlic and cook on medium heat for 2 minutes. Add red pepper and continue cooking on low heat until the garlic begins to turn slightly brown. Turn heat off and let rest.

Add spaghetti to the boiling salted water. Cook spaghetti according to directions on package.  Two minutes before the cooking time on package start testing the doneness of the spaghetti by taking a strand out of the water and biting into it to see how far cooked it. By doing this you’ll be able to determine if it needs to cook a bit
longer or if it’s ready.

Once the past is finished cooking, quickly remove it from the heat and drain into a colander, reserving about 4 tablespoons of the pasta cooking water to add to pasta sauce.

Add spaghetti back to the pot it cooked in and drizzle on a little olive oil and mix. Pour the garlic anchovy sauce and the reserved pasta water over the spaghetti with half the chopped Parsley and mix well.

Divide the spaghetti among four pasta plates or bowls. Sprinkle the top of each plate of Spaghetti with some chopped parsley and serve.
