Frank Sinatra’s Pasta Sauce Recipe

(as told to Sid Mark on the 7/4/86 “Sounds of Sinatra” program)

2 tbsp. light olive oil 3 whole cloves garlic (pierced w/fork) 2 cans oval “Italian type” tomatoes Salt, pepper, oregano to taste Basil, bay leaves, 1 tsp. finely chopped parsley (if desired) Quoting Mr. S: (Fragmented sentences and all.)

“You begin with a skillet and you use a light kind of olive oil and put in about 2 tbsp. full and put in 3 whole cloves of garlic. I usually puncture the cloves with a fork so it will exude the flavor I want. When the garlic is tanned or light brown take it out of the oil and throw it away. Keep the oil." "For 4 people you can take 2 cans of the oval shaped tomato and you put each can in a blender and count about a “slow four” to grind it up and put it in a saucepan…do that with both cans. Add a pinch of salt and a little bit of black pepper and little bit of oregano…maybe ½ tsp. full. Add the oil. I used to watch my dad do it. He’d just take his fingers and he’d take so much and throw it in the pot. And you let it simmer." … "Now…VERY IMPORTANT because this is what you don’t find in restaurants because they can’t take the time to do it. You take a good sized tsbp. And whatever oil or foreign matter that comes to the top; just keep skimming it until you have a pure red sauce. Low flame and cook for about ½ hr. and just let it sit there until you are ready to turn on your water for your pasta." "You want to put a couple of bay leaves and fresh basil is wonderful…at the last minute." "So you’ve got in the sauce olive oil, garlic, pepper, salt, oregano, a couple of basil leaves and, if you wish, a teaspoon - tablespoon. Of finely chopped parsley and that’s the way to make a simple pasta sauce.”

  The FEAST of The SEVEN FISHES is one of the most beloved Christmas Eve traditions in most Italian-American households-- as long as family members eating the ocean’s bounty are seafood lovers. While some people heard tales about Nonna killing eels on the side of the bathtub, two things are true for most: The Feast and the Seven Fishes is all about family and food. The feast, also known as "la Festa dei Sette Pesci"  in the old country, is a tradition that is popular in southern Italy. It reportedly started in Naples or Sicily and ever traveled north. The number of fish eaten represents different things for each family. Those who eat seven fishes are representing the seven deadly sins, the creation story, the seven sacraments or the seven virtues of Christian theology: hope, fortitude, charity, faith, temperance, prudence, and justice. While a definite meaning for the number seven is not known, some families eat as many as 13 types of fish. As few as three can be consumed, too. Participants of the seafood bonanza indulge in “frutta di mare,” as it’s called in Italian, because Catholic Italians abstain from meat and dairy until Midnight Mass. Similarly, butter cannot be used for preparing the dish. Instead, oil olive is typically used. Possible menu ideas include baccala (salted cod), scungilli (conch), pupa (octopus), calamari (squid), scallops, shrimp, blue crab, eel, clams, smelt, mussels and Anchovy flavored Pasta . Some families make Cioppino, a seafood stew that can have has many as seven fishes in one bowl. There’s no rule about how the fish can be eaten. While some people might consume the fishes in one fish, others eat them separately, whether it be baked, steamed or fried.

The Albanese Meats and Poultry Market had its humble beginning in New York City's famous "Little Italy" in 1923.

Started by Moe-the-Butcher's father and mother, Vincenzo and Mariannina (Mary), the Albanese Family has been serving the very finest meats and poultry for nearly 85 years.

In a part of the city overrun with butchers, pork stores, and Italian deli's, Albanese Meats and Poultry distinguished itself by catering to their customers and exclusively serving many of the specialty meats and holiday favorites desired by the mostly Italian immigrant community at that time. Then in the early 50's, Moe, after finishing college, joined the family business, as the success of the store on Elizabeth Street allowed them to expand their footprint on the Lower East Side with another store near the Williamsburg Bridge.
With his father close by his side, this is where Moe learned the trade and honed his skills as a Master Butcher- excelling in the art of skinning and butchering while formulating a keen eye for buying only the finest cuts of meat.
Then with the untimely passing of Vincenzo in 1954, the new shop was closed and Moe put aside his aspirations of attending medical school to join his mother on Elizabeth Street. He's been there ever since. Mary and Moe worked together on Elizabeth Street for nearly 50 years until her passing at the age of 97 in 2002. Now, Moe carries on the business and the great family tradition- serving only the finest cuts of meat with the same enjoyment and enthusiasm as the old days.
